The SOLARIS serves the freshest and finest coastal cuisines from its Destin fine dining menu on all of its weekly dinner and sunset cruises, weddings and private cruises. Our chefs use only fresh, local Gulf Seafood, prime beef and hormone-free, never frozen chicken. Everything is prepared fresh on board the yacht’s galley.
Integral in many of our dishes is the SOLARIS seasoning we have created. Our seasoning is a bridge between say “Old Bay” and “Lawry’s” which makes it so versatile. Blended together are fresh cracked Black Pepper, Kosher Salt, Celery Salt, granulated Garlic, smoked Paprika, Cayenne, Oregano & Onion powder.
The main purpose for our SOLARIS seasoning is to enhance the flavor of the dishes we utilize it with. That enters into the age old scuttlebutt of “seasoning” versus “salting”. The secret is to season throughout the process rather than at the end and “Always Be Tasting” – a motto in our Galley.
Always wishing the great meat and local seafood we use to speak for itself, our Chef’s utilize caution in over- seasoning. Cuisine which has been seasoned properly does not taste salty but does have a brighter, more vibrant and more intertwined flavors of the dish.

Kick off Spring Break in Destin with a festive Crawfish and Live Blues Music Cruise! Enjoy Cruise & Blues, Bugs & Brews on SunQuest Cruises SOLARIS’ second annual Crawfish Cruise on Sunday, March 29th from 1:30 – 4:30 p.m. Guests will indulge in a spread fit for a Cajun King (or queen) as the SOLARIS chefs serve freshly boiled, perfectly seasoned crawfish while cruising the beautiful waters and listening to live blues music by Cadillac Willy.
“It’s time for some fun in the sun as we combine the best of both worlds from New Orleans and Destin,” stated James Murray, General Manager for SOLARIS. “There’s no better way to kick off spring in Destin than cruising the water and enjoying fresh seafood.”
Murray is reverting back to his Louisiana roots and taking the traditional crawfish boil to the water on the SOLARIS yacht – an experience not available anywhere else on Northwest Florida’s Gulf Coast. Patrons will soak up the sun from the SOLARIS sky deck as they enjoy exquisite coastal cuisines in a Cajun-inspired, fun environment including Crawfish with all the trimmings from corn to potatoes. Other options include Shrimp, Jambalaya and Hot Dogs with Chips for kids. A variety of cold brews will also be available as a refreshing compliment to the day.
No crawfish boil is complete without live blues music. Voted Best Band by Destin Magazine, Emerald Coast Magazine & The BeachComber, Cadillac Willy has played all along the Emerald Coast for over 14 years. They’ve shared the stage with celebrities such as Emeril, American Idol’s Taylor Hicks and Edwin McCain to name a few.  Blues music by Cadillac Willy will engulf all three decks of the SOLARIS yacht while guests eat, drink and dance. The SOLARIS Crawfish Cruise is $45/pp including choice of crawfish, shrimp or jambalaya, live music and three-hour cruise. Kids 10 and under are $25 with hot dog and chips. The SOLARIS’s annual cruise events, such as the Easter Lunch Cruise, have evolved into time-honored family traditions as guests embark on a relaxing day filled with life-long memories.
After taking in the warm coastal breezes and panoramic views from the sky deck, guests will indulge in a three-course meal that begins with a gourmet Baby Spinach and Mushroom salad with a warm Bacon Vinaigrette topped with a Deviled Egg.
